Recipe for Week of June 4, 2001

Ramen Fried Rice (Makes 3 servings) 

Ingredients:

  • 1 pkg Ramen noodles (pork flavor, smoked ham flavor, or oriental flavor)
  • 1/2 cup frozen, fresh or canned green peas
  • 1/2 cup fresh or canned tomatoes (low sodium)
  • 2 eggs -- beaten
  • 1 pinch pepper
  • 1 tablespoon oil (use non-stick spray to reduce fat)
  • 1/2 cup onions -- finely chopped
  • 1 teaspoon chopped garlic
  • 1/2 to 1 cup chopped ham, chicken, or tuna (canned in water) optional
  • 1 tablespoon soy sauce

Preparation Instructions:

Break the noodles into about 6 pieces into a bowl, sprinkle with the seasoning packet and pour boiling water over to cover. Stir a bit and let soak while you prepare the rest of the recipe. 

Rinse peas and carrots with hot water in a colander to defrost if using frozen peas. 

Mix together the eggs and pepper and set aside. 

Heat a large skillet and add the oil (use cooking spray to reduce fat). Add the garlic and onions and stir-fry for 30 seconds. Add optional meat and pea& carrots and stir fry until hot, about 1 minute. 

Drain the noodles well, add to the skillet and stir fry for another couple of  minutes, stirring constantly. Stir in the soy sauce. Pour the eggs into the skillet and continue to cook and stir, until the bits of egg are cooked. Serve at once and top with fresh or canned tomatoes.
