Carrot Raisin Salad Lite (Yield: 4
servings [about 3/4 cup each])
Ingredients:
- 3 large carrots grated
- 1/2 cup plain, low-fat yogurt
- 1/3 cup crushed pineapple, packed in juice
- 2 teaspoons honey
- 1/2 cup seedless raisins
Preparation Instructions:
Place all ingredients in a medium sized salad or mixing bowl and mix well. Best
if refrigerated at least one hour. Stir well before serving. Use within four days.
