Recipe for Week of July 2, 2001

Carrot Raisin Salad Lite (Yield: 4 servings [about 3/4 cup each])

Ingredients:

  • 3 large carrots grated
  • 1/2 cup plain, low-fat yogurt
  • 1/3 cup crushed pineapple, packed in juice
  • 2 teaspoons honey 
  • 1/2 cup seedless raisins

Preparation Instructions:

Place all ingredients in a medium sized salad or mixing bowl and mix well. Best if refrigerated at least one hour. Stir well before serving. Use within four days.

Per serving: Calories 129; Fat 0.7 gm; Saturated Fat 0.4 gm; Cholesterol 2 mg; Sodium 51 mg; Carbohydrate 30 gm; Dietary fiber 3 gm; Sugars 24 gm; Protein 3 gm; Vitamin A 2200 RE; Vitamin C 10 mg; Calcium 89 mg; Iron 0.9 mg.
