Recipe for Week of August 27, 2001

Tuna Patties (Makes 4 servings:)

Ingredients:

  • 1 can(6 oz) light tuna canned in water
  • 1/4 cup onion chopped
  • 1 egg beaten
  • 1/4 cup yellow cornmeal
  • 1 tsp black pepper (more if desired)
  • 1 tsp ground oregano
  • 1 tbsp canola oil or olive oil

Preparation Instructions:

1. Drain tuna and put in large bowl. 
2. Add onion and beaten egg. Stir well. 
3. Add pepper and oregano. Stir well.
4. Roll into balls (about 4). Pat into patties. Lightly cover patties with cornmeal.
5. Cook in hot oil on both sides until golden brown.
