CNEP Recipe Corner

Recipe for Week of November 5, 2001

HUEVOS RANCHEROS (Makes 6 servings)
Preparation time: 15 minutes

Ingredients:

  • 2 cups Salsa Picante, canned or homemade
  • Cooking Spray
  • 6 corn tortillas
  • 12 eggs

Preparation Instructions:

Prepare salsa (if using canned, heat thoroughly). Keep warm in saucepan on low.  Stir frequently.  Spray cooking spray onto a medium skillet.  Fry tortillas until crisp and lightly browned.  Fry eggs. Place 2 eggs on each tortilla.  Top each with 1/3 cup salsa. Serve immediately.  Optional: Serve with refried beans sprinkled with low fat cheese.
