Recipe for Week of December 10, 2001

Black Eyed Pea Salad (Makes 6 servings)

Ingredients:

  • 1 qt cooked black eyed peas
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 1 can (1 lb) stewed tomatoes
  • 1 can (4 oz) chopped chilies
  • Oil and vinegar to taste
  • Hot sauce sauce to taste
  • Black pepper to taste
  • Parsley flakes to taste 

Preparation Instructions:

Mix all together. Chill several hours and serve.
