Recipe for Week of December

Pumpkin Scones (Makes 6
servings [about 12 scones]) Ingredients:
- 2 Tbsp reduced fat butter
or margarine
- 2 Tbsp sugar
- 1/2 cup mashed pumpkin
- 1 egg, well beaten
- 1/2 cup skim milk
- 2 1/2 cups self-rising flour,
sifted
Preparation Instructions:
Cream butter and sugar. Add pumpkin. Add egg. Add milk slowly Add flour.
Knead lightly on a floured surface. Roll out 1 inch thick. Cut into round circles.
You may want to use a small floured glass for cutting. Put on floured tray. Bake at 450 degrees for 20
minutes.
