Recipe for Week of February 18, 2002

Macaroni Hotdish (Makes 8 servings)

Ingredients:

  • 1/2 (1-pound) package elbow macaroni, uncooked
  • 1 tablespoons canola oil
  • 1 (12-ounce) can Lite SPAMŽ luncheon meat, cubed
  • 1 (15-ounce) can tomato sauce
  • 1 (11-ounce) can corn with peppers (drained and rinsed)
  • 2 raw carrots diced
  • 2 teaspoons instant minced onion
  • 1 teaspoon chili powder (more to taste)
  • 1 cup (4 ounces) diced mozzarella cheese

Preparation Instructions:

Heat oven to 350°F. Prepare macaroni according to package directions; drain. In large skillet, heat oil. Add SPAMŽ; cook until lightly browned. Stir in tomato sauce, corn, carrots, onion, chili powder and 1/4 cup of water. Simmer 10 minutes. Add macaroni and 1/2 cup cheese; mix well. Pour into 2-quart casserole. Top with remaining 1/2 cup cheese. Bake 20 to 30 minutes or until hot.
