Recipe for Week of October 4, 2002

Spiced Sweet Potato Rounds (Makes 8 servings)

Ingredients:

  • Butter flavor cooking spray
  • Cinnamon
  • Ground clove
  • Ground ginger
  • 4 medium sweet potatoes

Preparation Instructions:

Preheat oven to 400. Scrub sweet potatoes, leaving the skins on. Cut in 3/4-inch thick rounds.  Coat a shallow baking dish with cooking spray; sprinkle a generous layer of spices on the bottom. Add sweet potatoes. Now sprinkle another  generous layer of spices on the top cover with cooking spray and bake for 25 minutes. Cover with aluminum foil and return to oven for 10 minutes more until rounds are easily pierced with a fork.
