Recipe for Week of  01/09/04

Fresh Tomato Soup (Makes 4 servings)

Ingredients:

  • 1 teaspoon margarine
  • 2 tablespoons onions, minced
  • 3 cups tomatoes, peeled, seeded, and diced  (2 lbs)
  • 3/4 cup lowfat milk
  • 1/2 cup chicken broth
  • fresh oregano, chopped (if desired)

Preparation Instructions:

  1. Cook Onions in margarine
  2. Add tomatoes and chicken broth
  3. Cook 15 minutes
  4. Place in container of electric blender
  5. Process until smooth
  6. Add milk
  7. Heat 8 minutes
  8. Add fresh oregano to taste
