Grilled Chicken and Fruit Salad

  • 8 cups torn Romaine or iceberg lettuce

  • 1 11-ounce can Mandarin oranges, drained

  • 4 ounces grilled or smoked chicken or turkey, cut into 1/2-inch strips

  • 1/2 cup golden raisins

  • 1 20-ounce can pineapple tidbits, drained
    1/2 cup fat free ranch dressing

Toss lettuce, Mandarin oranges, chicken or turkey, raisins and pineapple in a large bowl.  Pour dressing over salad.  Toss gently. 

Yields 4 servings.
